I wouldn't coat stainless---just polish it---real easy to keep clean. Galvanized----P-coating makes sense---or paint---easier to keep clean, as well as see oil drips, etc... As for the noxious gases if you have a fire---I'd be willing to bet that that would be the least of your concerns---BTW, have you ever welded galv. metal--the galv itself is deadly!
Not to mention---I think there are p-coat coatings that are thermal protectants that have some insulating properties and can handle extremely high heat. Be interesting to look into.
